Ingredients

  • Lamb leg - 600 grams
  • Olive oil - 2 tablespoons
  • Garlic cloves - 4, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 1 sprig, chopped
  • Lemon juice - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red onion - 1, sliced
  • Bell pepper - 1, sliced

Steps

  1. In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, paprika, salt, and black pepper to create a marinade.
  2. Place the lamb leg in a resealable plastic bag or a shallow dish and pour the marinade over it, ensuring it's well-coated. Seal or cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove the lamb from the marinade and let it come to room temperature for about 30 minutes before grilling.
  5. Place the lamb leg on the grill and cook for about 15-20 minutes on each side, or until it reaches the desired doneness (medium-rare is about 60°C internal temperature).
  6. During the last 10 minutes of cooking, add the sliced red onion and bell pepper to the grill, cooking until they are tender and slightly charred.
  7. Remove the lamb from the grill and let it rest for 10 minutes before slicing.
  8. Serve the sliced lamb with grilled vegetables on the side.
