- Lamb leg - 600 grams
- Olive oil - 2 tablespoons
- Garlic cloves - 4, minced
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 1 sprig, chopped
- Lemon juice - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red onion - 1, sliced
- Bell pepper - 1, sliced
Steps
- In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, paprika, salt, and black pepper to create a marinade.
- Place the lamb leg in a resealable plastic bag or a shallow dish and pour the marinade over it, ensuring it's well-coated. Seal or cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat your grill to medium-high heat.
- Remove the lamb from the marinade and let it come to room temperature for about 30 minutes before grilling.
- Place the lamb leg on the grill and cook for about 15-20 minutes on each side, or until it reaches the desired doneness (medium-rare is about 60°C internal temperature).
- During the last 10 minutes of cooking, add the sliced red onion and bell pepper to the grill, cooking until they are tender and slightly charred.
- Remove the lamb from the grill and let it rest for 10 minutes before slicing.
- Serve the sliced lamb with grilled vegetables on the side.
