Ingredients

  • Pork shoulder - 500 grams
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Bay leaves - 2

Steps

  1. In a bowl, mix minced garlic, olive oil, oregano, cumin, paprika, salt, black pepper, and lemon juice to create a marinade.
  2. Rub the marinade all over the pork shoulder, ensuring it is well coated. Place bay leaves on top.
  3. Cover the pork with plastic wrap and marinate in the refrigerator for at least 2 hours, preferably overnight.
  4. Preheat the oven to 160°C (320°F).
  5. Place the marinated pork shoulder in a roasting pan and cover it with foil.
  6. Roast in the preheated oven for 2 hours, then remove the foil and increase the temperature to 220°C (428°F).
  7. Continue roasting for an additional 30 minutes or until the skin is crispy and the internal temperature reaches 75°C (165°F).
  8. Remove from the oven and let it rest for 10 minutes before slicing and serving.
