Ingredients

  • Cucumbers - 2 medium-sized
  • White vinegar - 120 ml
  • Water - 120 ml
  • Salt - 1 tablespoon
  • Sugar substitute (like erythritol) - 1 tablespoon
  • Garlic - 2 cloves, sliced
  • Dried red chili flakes - 1 teaspoon
  • Black peppercorns - 1 teaspoon
  • Dill sprigs - 4 sprigs

Steps

  1. Wash and slice the cucumbers into thin rounds and place them in a clean glass jar.
  2. In a saucepan, combine the white vinegar, water, salt, and sugar substitute. Heat the mixture over medium heat until the salt and sugar substitute dissolve completely.
  3. Add the sliced garlic, chili flakes, and black peppercorns to the vinegar mixture. Bring it to a gentle boil and then remove from heat.
  4. Pour the hot vinegar mixture over the cucumbers in the jar, ensuring they are fully submerged.
  5. Add the dill sprigs to the jar, seal tightly, and let it cool to room temperature.
  6. Once cooled, refrigerate for at least 2 hours before serving for the best flavor. They can be stored in the refrigerator for up to 2 weeks.
