Ingredients

  • Quinoa Penne - 200 grams
  • Olive Oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry Tomatoes - 200 grams, halved
  • Fresh Basil - 10 leaves, chopped
  • Parmesan Cheese - 30 grams, grated
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon

Steps

  1. Bring a large pot of salted water to a boil and add the quinoa penne. Cook according to package instructions, usually around 10-12 minutes, until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for about 5 minutes, stirring occasionally, until they begin to soften.
  4. Once the penne is cooked, drain it and add it to the skillet with the tomato mixture. Toss everything together to combine well.
  5. Add the chopped fresh basil, salt, and black pepper. Stir to combine and cook for an additional 2 minutes.
