- Water - 140 milliliters
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 10 grams, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese - 30 grams, grated (optional for serving)
Steps
- In a mixing bowl, combine the lentil flour and water to form a smooth dough. Allow it to rest for 10 minutes.
- Bring a large pot of salted water to a boil. Roll the lentil dough into thin sheets and cut them into penne shapes.
- Carefully drop the penne into the boiling water and cook for about 4-5 minutes until they float to the surface. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the halved cherry tomatoes and cook for 5-7 minutes until they soften, stirring occasionally.
- Stir in the cooked penne, chopped basil, oregano, salt, and black pepper. Mix well and cook for another 2-3 minutes to heat through.
- Serve hot, garnished with grated Parmesan cheese if desired.
