Ingredients

  • Lentil flour - 200 grams
  • Water - 140 milliliters
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30 grams, grated (optional for serving)

Steps

  1. In a mixing bowl, combine the lentil flour and water to form a smooth dough. Allow it to rest for 10 minutes.
  2. Bring a large pot of salted water to a boil. Roll the lentil dough into thin sheets and cut them into penne shapes.
  3. Carefully drop the penne into the boiling water and cook for about 4-5 minutes until they float to the surface. Drain and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add the halved cherry tomatoes and cook for 5-7 minutes until they soften, stirring occasionally.
  6. Stir in the cooked penne, chopped basil, oregano, salt, and black pepper. Mix well and cook for another 2-3 minutes to heat through.
  7. Serve hot, garnished with grated Parmesan cheese if desired.
