  • Almond flour - 50 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil - a handful, chopped

Steps

  1. Peel and dice the sweet potato into small cubes, then steam or boil until tender, about 10-15 minutes.
  2. Drain the sweet potato and mash it in a bowl. Allow it to cool slightly.
  3. Add almond flour, egg, salt, and black pepper to the mashed sweet potato. Mix well until a dough forms.
  4. On a floured surface, roll the dough into a log and cut into penne shapes or small tubes.
  5. In a pot of boiling salted water, gently add the sweet potato pasta. Cook for 3-4 minutes until they float to the surface. Drain and set aside.
  6. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  7. Pour in the heavy cream and bring to a simmer, then stir in the grated Parmesan cheese until melted and sauce thickens.
  8. Add the cooked pasta to the skillet, toss gently to coat in the sauce, and cook for an additional 1-2 minutes.
  9. Serve hot, garnished with chopped fresh basil.
