- Sweet potato - 200 grams
- Almond flour - 50 grams
- Egg - 1 large

- Garlic - 2 cloves, minced
- Heavy cream - 100 ml
- Parmesan cheese - 30 grams, grated
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil - a handful, chopped
Steps
- Peel and dice the sweet potato into small cubes, then steam or boil until tender, about 10-15 minutes.
- Drain the sweet potato and mash it in a bowl. Allow it to cool slightly.
- Add almond flour, egg, salt, and black pepper to the mashed sweet potato. Mix well until a dough forms.
- On a floured surface, roll the dough into a log and cut into penne shapes or small tubes.
- In a pot of boiling salted water, gently add the sweet potato pasta. Cook for 3-4 minutes until they float to the surface. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and bring to a simmer, then stir in the grated Parmesan cheese until melted and sauce thickens.
- Add the cooked pasta to the skillet, toss gently to coat in the sauce, and cook for an additional 1-2 minutes.
- Serve hot, garnished with chopped fresh basil.
