Ingredients
- Rice flour - 200 grams
- Water - 150 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Bell pepper - 1/2, diced
- Tomato - 1 medium, diced
- Parmesan cheese - 30 grams, grated
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil - 5 leaves, chopped
- Chili flakes - 1/4 teaspoon (optional)
Steps
- In a medium bowl, combine the rice flour and water, mixing until a smooth dough forms. Let it rest for 10 minutes.
- On a floured surface, roll out the dough to about 3 mm thickness and cut into penne shapes (short tubes with diagonal ends).
- Bring a pot of salted water to a boil and cook the penne for about 8-10 minutes or until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
- Add the diced bell pepper and tomato to the skillet, cooking for another 5 minutes until softened.
- Stir in the cooked penne, salt, black pepper, and fresh basil. Toss everything together over medium heat for 2-3 minutes.
- Serve hot, garnished with grated Parmesan cheese and chili flakes if desired.
