Ingredients

  • Rice flour - 200 grams
  • Water - 150 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1/2, diced
  • Tomato - 1 medium, diced
  • Parmesan cheese - 30 grams, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil - 5 leaves, chopped
  • Chili flakes - 1/4 teaspoon (optional)

Steps

  1. In a medium bowl, combine the rice flour and water, mixing until a smooth dough forms. Let it rest for 10 minutes.
  2. On a floured surface, roll out the dough to about 3 mm thickness and cut into penne shapes (short tubes with diagonal ends).
  3. Bring a pot of salted water to a boil and cook the penne for about 8-10 minutes or until al dente. Drain and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
  5. Add the diced bell pepper and tomato to the skillet, cooking for another 5 minutes until softened.
  6. Stir in the cooked penne, salt, black pepper, and fresh basil. Toss everything together over medium heat for 2-3 minutes.
  7. Serve hot, garnished with grated Parmesan cheese and chili flakes if desired.
