Ingredients

  • Penne pasta - 150 grams
  • Sun-dried tomatoes in oil - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red onion - 1 small, diced
  • Fresh basil - 10 leaves, torn
  • Salt - to taste
  • Black pepper - to taste
  • Crushed red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente, about 10-12 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the diced red onion and sauté for about 3-4 minutes until softened.
  4. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add the sun-dried tomatoes (with some of their oil) to the skillet and cook for another 2-3 minutes, stirring occasionally.
  6. Once the penne is cooked, drain it and reserve about 1/2 cup of the pasta cooking water.
  7. Add the drained penne to the skillet with the sun-dried tomato mixture, tossing to combine.
  8. If the pasta seems dry, add a little reserved pasta water until the desired consistency is reached.
  9. Season with salt, black pepper, and crushed red pepper flakes (if using) to taste.
  10. Remove from heat and stir in the torn fresh basil before serving.
