- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red onion - 1 small, diced
- Fresh basil - 10 leaves, torn
- Salt - to taste
- Black pepper - to taste
- Crushed red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente, about 10-12 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the diced red onion and sauté for about 3-4 minutes until softened.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the sun-dried tomatoes (with some of their oil) to the skillet and cook for another 2-3 minutes, stirring occasionally.
- Once the penne is cooked, drain it and reserve about 1/2 cup of the pasta cooking water.
- Add the drained penne to the skillet with the sun-dried tomato mixture, tossing to combine.
- If the pasta seems dry, add a little reserved pasta water until the desired consistency is reached.
- Season with salt, black pepper, and crushed red pepper flakes (if using) to taste.
- Remove from heat and stir in the torn fresh basil before serving.
