- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 400 grams
- Beef broth - 250 ml
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped (for garnish)
- Parmesan cheese - 30 grams, grated (for serving)
Steps
- In a large pot, bring salted water to a boil and cook the gluten-free penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, and diced celery to the skillet. Cook for another 5 minutes, stirring occasionally, until the vegetables are softened.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the tomato paste and cook for 2 minutes. Then, add the canned diced tomatoes, beef broth, dried oregano, salt, and black pepper. Bring to a simmer.
- Reduce heat to low and let the ragu simmer for 20 minutes, stirring occasionally until thickened.
- Taste and adjust seasoning if necessary. Combine the cooked penne pasta with the ragu in the skillet, tossing to coat evenly.
- Serve hot, garnished with fresh basil and grated Parmesan cheese.
