  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 400 grams
  • Beef broth - 250 ml
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped (for garnish)
  • Parmesan cheese - 30 grams, grated (for serving)

Steps

  1. In a large pot, bring salted water to a boil and cook the gluten-free penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic, diced carrot, and diced celery to the skillet. Cook for another 5 minutes, stirring occasionally, until the vegetables are softened.
  4. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the tomato paste and cook for 2 minutes. Then, add the canned diced tomatoes, beef broth, dried oregano, salt, and black pepper. Bring to a simmer.
  6. Reduce heat to low and let the ragu simmer for 20 minutes, stirring occasionally until thickened.
  7. Taste and adjust seasoning if necessary. Combine the cooked penne pasta with the ragu in the skillet, tossing to coat evenly.
  8. Serve hot, garnished with fresh basil and grated Parmesan cheese.
