- Penne pasta - 150 grams
- Fresh arugula - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Lemon juice - 1 tablespoon
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente, usually about 10-12 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
- Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the rest and add the pasta directly to the skillet with the garlic and tomatoes.
- Add the fresh arugula to the skillet, along with the lemon juice, and toss everything together. If the pasta seems dry, add some reserved pasta water to reach the desired consistency.
- Season with salt and black pepper to taste, and toss in the grated Parmesan cheese before serving.
