  • Penne pasta - 200 grams
  • Black olives, pitted and chopped - 100 grams
  • Olive oil - 3 tablespoons
  • Garlic, minced - 2 cloves
  • Cherry tomatoes, halved - 150 grams
  • Fresh basil leaves, chopped - 1/4 cup
  • Parmesan cheese, grated - 30 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the chopped black olives and halved cherry tomatoes, cooking for an additional 3-4 minutes until the tomatoes start to soften.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the pasta.
  6. Add the drained pasta to the skillet and toss to combine with the olive and tomato mixture.
  7. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  8. Stir in the chopped basil and season with salt and black pepper to taste.
  9. Serve the pasta hot, topped with grated Parmesan cheese and a few extra basil leaves for garnish.
