- Black olives, pitted and chopped - 100 grams
- Olive oil - 3 tablespoons
- Garlic, minced - 2 cloves
- Cherry tomatoes, halved - 150 grams
- Fresh basil leaves, chopped - 1/4 cup
- Parmesan cheese, grated - 30 grams
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the chopped black olives and halved cherry tomatoes, cooking for an additional 3-4 minutes until the tomatoes start to soften.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the pasta.
- Add the drained pasta to the skillet and toss to combine with the olive and tomato mixture.
- If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Stir in the chopped basil and season with salt and black pepper to taste.
- Serve the pasta hot, topped with grated Parmesan cheese and a few extra basil leaves for garnish.
