Ingredients

  • Gluten-free penne pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red onion - 1 small, finely chopped
  • Cherry tomatoes - 200 grams, halved
  • Mixed seafood (shrimp, squid, and mussels) - 250 grams
  • White wine - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - 1/2 teaspoon (optional)

Steps

  1. Cook the gluten-free penne pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped red onion, sautéing until the onion becomes translucent.
  3. Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften.
  4. Stir in the mixed seafood and cook for 5-7 minutes, or until the shrimp turns pink and the mussels open up.
  5. Pour in the white wine and let it simmer for about 3 minutes, allowing the alcohol to evaporate.
  6. Add the cooked penne pasta to the skillet, tossing everything together. Mix in the lemon juice, chopped parsley, salt, black pepper, and red chili flakes if using.
  7. Cook for an additional 2 minutes, stirring gently to combine all the flavors. Serve hot.
