  • Onion - 1 small, finely chopped
  • Cherry tomatoes - 100 grams, halved
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Boil a pot of salted water and cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Add the halved cherry tomatoes and cook for another 2-3 minutes until they start to soften.
  5. Stir in the fresh spinach, cooking until wilted, about 2-3 minutes. Season with salt and black pepper to taste.
  6. Combine the cooked penne with the spinach mixture in the skillet, tossing to combine well.
  7. Remove from heat and stir in the grated Parmesan cheese and lemon juice.
