- Onion - 1 small, finely chopped
- Cherry tomatoes - 100 grams, halved
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Boil a pot of salted water and cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Add the halved cherry tomatoes and cook for another 2-3 minutes until they start to soften.
- Stir in the fresh spinach, cooking until wilted, about 2-3 minutes. Season with salt and black pepper to taste.
- Combine the cooked penne with the spinach mixture in the skillet, tossing to combine well.
- Remove from heat and stir in the grated Parmesan cheese and lemon juice.
- Serve warm, garnished with additional Parmesan if desired.
