  • Penne pasta - 200 grams
  • Canned tuna in olive oil - 150 grams, drained
  • Cherry tomatoes - 200 grams, halved
  • Black olives - 50 grams, pitted and sliced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - optional, to taste

Steps

  1. Bring a large pot of salted water to a boil and add the penne pasta. Cook according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  4. Stir in the halved cherry tomatoes and cook for about 5 minutes until they start to soften.
  5. Add the drained tuna, sliced black olives, salt, black pepper, and red pepper flakes (if using) to the skillet. Mix well and cook for an additional 2-3 minutes, allowing the flavors to combine.
  6. Once the pasta is ready, drain it and add it to the skillet with the tuna mixture. Toss everything together gently.
  7. Remove from heat and garnish with fresh parsley before serving.
