- Penne pasta - 200 grams
- Canned tuna in olive oil - 150 grams, drained
- Cherry tomatoes - 200 grams, halved
- Black olives - 50 grams, pitted and sliced
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - optional, to taste
Steps
- Bring a large pot of salted water to a boil and add the penne pasta. Cook according to package instructions until al dente, usually about 10-12 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic to the skillet and sauté for another minute until fragrant.
- Stir in the halved cherry tomatoes and cook for about 5 minutes until they start to soften.
- Add the drained tuna, sliced black olives, salt, black pepper, and red pepper flakes (if using) to the skillet. Mix well and cook for an additional 2-3 minutes, allowing the flavors to combine.
- Once the pasta is ready, drain it and add it to the skillet with the tuna mixture. Toss everything together gently.
- Remove from heat and garnish with fresh parsley before serving.
