  • Penne pasta - 200 grams
  • Zucchini - 1 medium (about 200 grams), sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 grams, chopped
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the sliced zucchini to the skillet and cook for 5-7 minutes, stirring occasionally, until it becomes tender.
  5. Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.
  6. Once the pasta is cooked, drain it and reserve 1/2 cup of the pasta water.
  7. Add the drained penne to the skillet with the zucchini and tomatoes. Toss to combine, adding reserved pasta water a little at a time to create a light sauce.
  8. Stir in the chopped basil and season with salt and black pepper to taste.
  9. Serve the pasta hot, topped with grated Parmesan cheese.
