- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 grams, chopped
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced zucchini to the skillet and cook for 5-7 minutes, stirring occasionally, until it becomes tender.
- Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.
- Once the pasta is cooked, drain it and reserve 1/2 cup of the pasta water.
- Add the drained penne to the skillet with the zucchini and tomatoes. Toss to combine, adding reserved pasta water a little at a time to create a light sauce.
- Stir in the chopped basil and season with salt and black pepper to taste.
- Serve the pasta hot, topped with grated Parmesan cheese.
