- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Cherry tomatoes - 200 grams, halved
- Black olives - 50 grams, sliced
- Parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Cook the penne pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
- Stir in the canned tuna (drained), sliced black olives, and lemon juice. Mix well and let it cook for another 3-4 minutes to heat through.
- Add the cooked penne to the skillet, tossing everything together. Season with salt and black pepper to taste.
- Remove from heat, sprinkle with chopped parsley, and serve hot.
