Ingredients

  • Penne pasta - 150 grams
  • Garlic - 6 cloves, minced
  • Olive oil - 50 milliliters
  • Unsalted butter - 30 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta cooks, heat the olive oil and unsalted butter in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to let it burn.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the penne.
  5. Add the drained pasta to the skillet with the garlic oil and butter, tossing to coat well.
  6. If the pasta seems dry, add a little reserved pasta water until desired consistency is reached.
  7. Season with salt and black pepper to taste, and stir in the chopped parsley.
  8. Serve hot, garnished with grated Parmesan cheese if desired.
