  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Vegetable broth - 150 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the diced zucchini to the skillet and continue to cook for about 5-7 minutes, stirring occasionally until the zucchini is tender.
  4. Pour in the vegetable broth and bring the mixture to a simmer. Cook for an additional 3-4 minutes.
  5. Using an immersion blender, blend the zucchini mixture until smooth. If you don't have an immersion blender, you can carefully transfer the mixture to a regular blender and then return it to the skillet.
  6. Stir in the grated Parmesan cheese, and season with salt and black pepper to taste.
  7. Add the cooked penne to the skillet, tossing to coat the pasta evenly with the sauce. Cook for another 2-3 minutes until heated through.
  8. Remove from heat and stir in the chopped fresh basil before serving.
