- Black pepper - 1/2 teaspoon
- Red bell pepper - 1, sliced
- Cherry tomatoes - 150 grams, halved
- Onion - 1 small, sliced
- Lemon slices - 4
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the olive oil, minced garlic, lime juice, chopped cilantro, chopped parsley, sea salt, and black pepper to create a marinade.
- Place the fish fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated. Let them marinate for 15 minutes.
- While the fish is marinating, prepare a clay tile or an oven-safe dish by lightly greasing it with olive oil.
- Arrange the sliced red bell pepper, halved cherry tomatoes, and sliced onion evenly on the tile or dish.
- Place the marinated fish fillets on top of the vegetables, and then lay lemon slices over the fish.
- Cover the dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven, uncover, and let it sit for a few minutes before serving.
