  • Olive oil - 2 tablespoons
  • Garlic cloves - 3, minced
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red bell pepper - 1, sliced
  • Cherry tomatoes - 150 grams, halved
  • Onion - 1 small, sliced
  • Lemon slices - 4

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the olive oil, minced garlic, lime juice, chopped cilantro, chopped parsley, sea salt, and black pepper to create a marinade.
  3. Place the fish fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated. Let them marinate for 15 minutes.
  4. While the fish is marinating, prepare a clay tile or an oven-safe dish by lightly greasing it with olive oil.
  5. Arrange the sliced red bell pepper, halved cherry tomatoes, and sliced onion evenly on the tile or dish.
  6. Place the marinated fish fillets on top of the vegetables, and then lay lemon slices over the fish.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Remove from the oven, uncover, and let it sit for a few minutes before serving.
