Ingredients

  • Fresh fish fillet (such as snapper or tilapia) - 400 grams
  • Garlic - 3 cloves, minced
  • Lemon juice - 30 ml
  • Olive oil - 30 ml
  • Fresh parsley - 10 grams, chopped
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Lime wedges - for serving

Steps

  1. Preheat your grill or barbecue to medium-high heat.
  2. In a small bowl, mix together the minced garlic, lemon juice, olive oil, paprika, salt, black pepper, and chopped parsley to create a marinade.
  3. Place the fish fillet in a shallow dish and pour the marinade over it, ensuring the fish is well coated. Let it marinate for at least 15 minutes.
  4. While the fish is marinating, prepare the cherry tomatoes by tossing them with a drizzle of olive oil, salt, and pepper.
  5. Once marinated, place the fish fillet on the preheated grill. Cook for about 5-7 minutes on each side, depending on the thickness of the fillet, or until the fish is cooked through and flakes easily with a fork.
  6. In the last few minutes of grilling, add the seasoned cherry tomatoes to the grill, allowing them to blister and soften.
  7. Remove the fish and tomatoes from the grill and serve immediately with lime wedges on the side.
