Ingredients

  • White fish fillets (such as cod or tilapia) - 300 grams
  • Garlic - 4 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced

Steps

  1. In a bowl, combine the minced garlic, olive oil, lemon juice, paprika, cayenne pepper, salt, and black pepper to create a marinade.
  2. Add the white fish fillets to the marinade, making sure they are well coated. Let them marinate for 15 minutes.
  3. Meanwhile, in a large skillet over medium heat, add the remaining olive oil and sauté the sliced zucchini and bell pepper for about 5 minutes until slightly tender.
  4. Add the halved cherry tomatoes to the skillet and cook for an additional 3-4 minutes.
  5. Push the vegetables to the side of the skillet and add the marinated fish fillets to the center. Cook for about 4-5 minutes on each side or until the fish flakes easily with a fork.
  6. Once cooked, sprinkle the chopped parsley over the dish and serve the fish alongside the sautéed vegetables.
