Ingredients

  • Soy protein fillets - 200 grams
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Tomato - 1 medium, diced
  • Red onion - 1 small, diced
  • Bell pepper - 1/2, diced
  • Coconut milk - 100 ml
  • Cilantro - 2 tablespoons, chopped

Steps

  1. In a bowl, combine soy protein fillets, lemon juice, minced garlic, olive oil, salt, black pepper, and paprika. Marinate for at least 15 minutes.
  2. While the fillets are marinating, prepare the sauce by mixing diced tomatoes, red onion, bell pepper, and coconut milk in a saucepan over medium heat. Cook for about 5-7 minutes until the vegetables soften.
  3. After marinating, heat a non-stick skillet over medium heat and cook the soy fillets for approximately 3-4 minutes on each side until golden brown.
  4. Once the fillets are cooked, remove them from the skillet and add the sauce mixture to the pan, stirring well to incorporate the flavors.
  5. Serve the soy fillets topped with the vegetable sauce and garnished with fresh parsley and cilantro.
