- Soy protein fillets - 200 grams
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Tomato - 1 medium, diced
- Red onion - 1 small, diced
- Bell pepper - 1/2, diced
- Coconut milk - 100 ml
- Cilantro - 2 tablespoons, chopped
Steps
- In a bowl, combine soy protein fillets, lemon juice, minced garlic, olive oil, salt, black pepper, and paprika. Marinate for at least 15 minutes.
- While the fillets are marinating, prepare the sauce by mixing diced tomatoes, red onion, bell pepper, and coconut milk in a saucepan over medium heat. Cook for about 5-7 minutes until the vegetables soften.
- After marinating, heat a non-stick skillet over medium heat and cook the soy fillets for approximately 3-4 minutes on each side until golden brown.
- Once the fillets are cooked, remove them from the skillet and add the sauce mixture to the pan, stirring well to incorporate the flavors.
- Serve the soy fillets topped with the vegetable sauce and garnished with fresh parsley and cilantro.
