Ingredients

  • White fish fillets (e.g., snapper or sea bass) - 300 grams
  • Coarse sea salt - 500 grams
  • Egg whites - 2 large
  • Fresh herbs (e.g., parsley and cilantro) - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Lemon zest - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the coarse sea salt with the egg whites, chopped herbs, minced garlic, and lemon zest until evenly mixed.
  3. On a baking sheet lined with parchment paper, spread half of the salt mixture into a rectangle large enough to hold the fish fillets.
  4. Place the fish fillets on top of the salt layer, then season with black pepper and drizzle with olive oil.
  5. Cover the fish completely with the remaining salt mixture, making sure it is well sealed.
  6. Bake in the preheated oven for 20 minutes for a 2.5 cm thick fillet, or until the fish is cooked through and flakes easily with a fork.
  7. Remove from the oven and let it cool for a few minutes before cracking the salt crust with a spoon.
  8. Carefully lift the fish from the salt, and serve with lemon wedges and a side of steamed vegetables.
