- Coarse sea salt - 500 grams
- Egg whites - 2 large
- Fresh herbs (e.g., parsley and cilantro) - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Lemon zest - 1 teaspoon
- Olive oil - 1 tablespoon
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the coarse sea salt with the egg whites, chopped herbs, minced garlic, and lemon zest until evenly mixed.
- On a baking sheet lined with parchment paper, spread half of the salt mixture into a rectangle large enough to hold the fish fillets.
- Place the fish fillets on top of the salt layer, then season with black pepper and drizzle with olive oil.
- Cover the fish completely with the remaining salt mixture, making sure it is well sealed.
- Bake in the preheated oven for 20 minutes for a 2.5 cm thick fillet, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven and let it cool for a few minutes before cracking the salt crust with a spoon.
- Carefully lift the fish from the salt, and serve with lemon wedges and a side of steamed vegetables.
