Ingredients

  • Fresh whole fish (like tilapia or sea bass) - 400 grams
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Garlic - 3 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Red bell pepper - 1/2, sliced
  • Onion - 1 small, sliced
  • Tomato - 1, sliced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Clean and gut the fish, rinsing it under cold water and patting it dry with paper towels.
  3. In a small bowl, mix together the olive oil, lemon juice, minced garlic, chopped parsley, chopped cilantro, salt, black pepper, and paprika to create a marinade.
  4. Place the fish in a baking dish and rub the marinade all over the fish, including inside the cavity.
  5. Stuff the cavity of the fish with sliced red bell pepper, onion, and tomato.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the fish flakes easily with a fork and is cooked through.
  8. Serve hot, garnished with extra parsley and lemon wedges if desired.
