- Fresh whole fish (like tilapia or sea bass) - 400 grams
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Garlic - 3 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Red bell pepper - 1/2, sliced
- Onion - 1 small, sliced
- Tomato - 1, sliced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Clean and gut the fish, rinsing it under cold water and patting it dry with paper towels.
- In a small bowl, mix together the olive oil, lemon juice, minced garlic, chopped parsley, chopped cilantro, salt, black pepper, and paprika to create a marinade.
- Place the fish in a baking dish and rub the marinade all over the fish, including inside the cavity.
- Stuff the cavity of the fish with sliced red bell pepper, onion, and tomato.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the fish flakes easily with a fork and is cooked through.
- Serve hot, garnished with extra parsley and lemon wedges if desired.
