Ingredients

  • Whole white fish (such as snapper or sea bass) - 500 grams
  • Coarse sea salt - 1 kilogram
  • Fresh herbs (such as parsley and cilantro) - 1/2 cup, chopped
  • Lemon - 1, sliced
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Rinse the whole fish under cold water and pat it dry with paper towels.
  3. In a bowl, mix the chopped herbs, minced garlic, olive oil, and black pepper to create a marinade.
  4. Make shallow cuts on both sides of the fish and rub the marinade into the cuts and the cavity of the fish.
  5. On a baking sheet, spread half of the coarse sea salt to form a bed for the fish.
  6. Place the fish on top of the salt bed and stuff the cavity with lemon slices.
  7. Cover the fish completely with the remaining coarse sea salt, ensuring it is fully sealed.
  8. Bake in the preheated oven for about 30 minutes.
  9. Remove from the oven and allow it to rest for 5-10 minutes before breaking the salt crust.
  10. Carefully remove the salt crust, plate the fish, and serve with your choice of vegetables or a fresh salad.
