- Coarse sea salt - 1 kilogram
- Fresh herbs (such as parsley and cilantro) - 1/2 cup, chopped
- Lemon - 1, sliced
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Black pepper - to taste
Steps
- Preheat your oven to 220°C (428°F).
- Rinse the whole fish under cold water and pat it dry with paper towels.
- In a bowl, mix the chopped herbs, minced garlic, olive oil, and black pepper to create a marinade.
- Make shallow cuts on both sides of the fish and rub the marinade into the cuts and the cavity of the fish.
- On a baking sheet, spread half of the coarse sea salt to form a bed for the fish.
- Place the fish on top of the salt bed and stuff the cavity with lemon slices.
- Cover the fish completely with the remaining coarse sea salt, ensuring it is fully sealed.
- Bake in the preheated oven for about 30 minutes.
- Remove from the oven and allow it to rest for 5-10 minutes before breaking the salt crust.
- Carefully remove the salt crust, plate the fish, and serve with your choice of vegetables or a fresh salad.
