- Black pepper - to taste
- Chili flakes - optional, to taste
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and sliced red bell pepper, cooking for another 2-3 minutes until the peppers soften.
- Add the diced tomatoes to the skillet, season with salt, black pepper, and chili flakes (if using). Cook for about 5 minutes until the tomatoes break down.
- Pour in the coconut milk and stir to combine. Allow the sauce to simmer for another 5 minutes.
- Gently place the fish fillets into the sauce, ensuring they are submerged. Cover the skillet and cook for about 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from heat and stir in the fresh cilantro and lime juice. Adjust seasoning if necessary.
