  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Zucchini - 1 medium, sliced
  • Cherry tomatoes - 150 grams, halved

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix together the lemon juice, minced garlic, olive oil, chopped parsley, salt, black pepper, and paprika to create the marinade.
  3. Place the fish fillets in a baking dish and pour the marinade over them, ensuring they are well coated. Let them marinate for about 10 minutes.
  4. While the fish is marinating, prepare the vegetables by placing the sliced zucchini and halved cherry tomatoes around the fish in the baking dish.
  5. Drizzle a little more olive oil over the vegetables and season with salt and pepper.
