  • Garlic - 2 cloves, minced
  • Onion - 1 small, thinly sliced
  • Tomato - 1 medium, diced
  • Bell pepper (red or yellow) - 1, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Olives (green or black) - 50 grams, pitted and sliced

Steps

  1. Preheat the oven to 200°C (392°F).
  2. In a mixing bowl, combine the olive oil, lemon juice, minced garlic, salt, black pepper, and paprika.
  3. Add the fish fillets to the bowl and coat them well with the marinade. Let them marinate for about 10 minutes.
  4. In a baking dish, layer the sliced onions, diced tomatoes, and bell pepper at the bottom.
  5. Place the marinated fish fillets on top of the vegetable layer.
  6. Scatter the cherry tomatoes and olives over the fish.
  7. Sprinkle the chopped parsley on top for garnish.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes.
  9. Remove the foil and bake for an additional 5-10 minutes, or until the fish is cooked through and flakes easily with a fork.
  10. Serve hot with a side of brown rice or a fresh salad.
