- Fresh parsley - 2 tablespoons, chopped

- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cherry tomatoes - 100 grams, halved
- Olives (green or black) - 50 grams, pitted and sliced
Steps
- Preheat the oven to 200°C (392°F).
- In a mixing bowl, combine the olive oil, lemon juice, minced garlic, salt, black pepper, and paprika.
- Add the fish fillets to the bowl and coat them well with the marinade. Let them marinate for about 10 minutes.
- In a baking dish, layer the sliced onions, diced tomatoes, and bell pepper at the bottom.
- Place the marinated fish fillets on top of the vegetable layer.
- Scatter the cherry tomatoes and olives over the fish.
- Sprinkle the chopped parsley on top for garnish.
- Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve hot with a side of brown rice or a fresh salad.
