Ingredients

  • Chicken breast - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Mixed greens (lettuce, arugula) - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1/2, sliced

Steps

  1. In a bowl, mix olive oil, minced garlic, lemon juice, paprika, oregano, salt, and black pepper to create a marinade.
  2. Add the chicken breast to the marinade, ensuring it is well coated. Cover and refrigerate for at least 15 minutes to absorb the flavors.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 75°C.
  5. While the chicken is grilling, prepare the salad by combining mixed greens, cherry tomatoes, and cucumber in a bowl. Drizzle with olive oil and a pinch of salt if desired.
  6. Once the chicken is cooked, let it rest for a few minutes, then slice it.
  7. Serve the grilled chicken on a plate next to the fresh salad and garnish with chopped parsley.
