Ingredients

  • Unsweetened shredded coconut - 50g
  • Coconut cream - 200ml
  • Almond flour - 50g
  • Erythritol - 30g
  • Eggs - 2 large
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Sea salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, baking powder, and sea salt.
  3. In another bowl, whisk the eggs and erythritol until light and fluffy, then add the vanilla extract.
  4. Gradually fold the dry ingredients into the egg mixture until well combined.
  5. Spread the batter evenly onto a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
  6. Allow the almond flour cake to cool completely, then cut it into squares or rectangles.
  7. In a saucepan, heat the coconut cream over low heat until it starts to simmer, then stir in the shredded coconut and cook for an additional 5 minutes.
  8. Remove from heat and let the coconut mixture cool slightly.
  9. In a serving dish, layer the almond flour cake pieces, followed by the coconut mixture, repeating until all ingredients are used, finishing with a layer of coconut on top.
  10. Chill the dessert in the refrigerator for at least 2 hours before serving.
