Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, baking powder, and sea salt.
- In another bowl, whisk the eggs and erythritol until light and fluffy, then add the vanilla extract.
- Gradually fold the dry ingredients into the egg mixture until well combined.
- Spread the batter evenly onto a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
- Allow the almond flour cake to cool completely, then cut it into squares or rectangles.
- In a saucepan, heat the coconut cream over low heat until it starts to simmer, then stir in the shredded coconut and cook for an additional 5 minutes.
