  • vanilla extract - 1 teaspoon
  • cornstarch - 1 tablespoon
  • walnuts (chopped) - 30g
  • whole grain digestive biscuits - 6 pieces
  • cocoa powder - 1 tablespoon (for dusting)

Steps

  1. In a small saucepan, melt the dark chocolate over low heat, stirring until smooth.
  2. In another bowl, whisk together the almond milk, honey (or maple syrup), vanilla extract, and cornstarch until well combined.
  3. Gradually pour the almond milk mixture into the melted chocolate, stirring continuously until the mixture thickens to a pudding-like consistency.
  4. Remove from heat and allow the chocolate cream to cool slightly.
  5. While the cream cools, prepare a serving dish. Break the digestive biscuits into halves and layer them at the bottom of the dish.
  6. Spread a layer of the chocolate cream over the biscuits, followed by a sprinkle of chopped walnuts.
