Ingredients

  • Whole grain digestive biscuits - 8 pieces
  • Coconut flakes - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Mint leaves - for garnish

Steps

  1. In a bowl, combine the diced pineapple with lime juice and honey. Mix well and set aside to marinate for about 5 minutes.
  2. In another bowl, fold the Greek yogurt until smooth and creamy.
  3. In serving glasses or bowls, layer the whole grain digestive biscuits at the bottom.
