- Duck legs - 2 pieces (approximately 800g)
- Tucupi (fermented manioc juice) - 250 ml
- Garlic - 4 cloves, minced
- Onion - 1 medium, chopped
- Fresh cilantro - 30 g, chopped
- Chili pepper - 1, finely chopped (optional)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 500 ml
Steps
- Heat olive oil in a large pot over medium heat, then add chopped onion and minced garlic, sautéing until fragrant and translucent.
- Season the duck legs with salt and black pepper, then add them to the pot, browning on all sides for about 8-10 minutes.
- Pour in the tucupi and water, then add chopped chili pepper if using. Bring to a simmer.
- Cover the pot and cook on low heat for about 60 minutes, or until the duck is tender and cooked through.
- Once cooked, remove the duck legs and set aside. Increase the heat to reduce the sauce slightly for about 10 minutes.
- Serve the duck legs topped with the tucupi sauce and garnish with fresh cilantro.
