Ingredients

  • Duck legs - 2 pieces (approximately 800g)
  • Tucupi (fermented manioc juice) - 250 ml
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, chopped
  • Fresh cilantro - 30 g, chopped
  • Chili pepper - 1, finely chopped (optional)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 500 ml

Steps

  1. Heat olive oil in a large pot over medium heat, then add chopped onion and minced garlic, sautéing until fragrant and translucent.
  2. Season the duck legs with salt and black pepper, then add them to the pot, browning on all sides for about 8-10 minutes.
  3. Pour in the tucupi and water, then add chopped chili pepper if using. Bring to a simmer.
  4. Cover the pot and cook on low heat for about 60 minutes, or until the duck is tender and cooked through.
  5. Once cooked, remove the duck legs and set aside. Increase the heat to reduce the sauce slightly for about 10 minutes.
  6. Serve the duck legs topped with the tucupi sauce and garnish with fresh cilantro.
