- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili flakes - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a bowl, mix minced garlic, chopped rosemary, chopped thyme, olive oil, lime juice, paprika, salt, black pepper, and chili flakes to create a marinade.
- Score the skin of the duck breasts in a crosshatch pattern to help render the fat and absorb the marinade.
- Place the duck breasts in the marinade and let them marinate for at least 30 minutes, preferably in the refrigerator.
- Preheat your grill to medium-high heat and oil the grates to prevent sticking.
- Remove the duck breasts from the marinade and place them skin-side down on the grill.
- Grill for about 6-8 minutes on the skin side until the skin is crispy and golden brown.
- Flip the duck breasts and grill for an additional 5-7 minutes, or until they reach an internal temperature of 75°C (165°F).
- Remove the duck from the grill and let it rest for 5 minutes before slicing.
- Garnish with chopped parsley before serving.
