Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 120 ml
  • Vegetable oil - 30 ml
  • Salt - 1 teaspoon
  • Spinach - 100 grams, chopped
  • Carrot - 1 medium, grated
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Feta cheese - 50 grams, crumbled
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add warm water and vegetable oil, knead until a smooth dough forms. Cover and let it rest for 15 minutes.
  2. In a skillet, heat a drizzle of olive oil over medium heat. Sauté the onion and garlic until soft and fragrant, about 3 minutes.
  3. Add the chopped spinach and grated carrot to the skillet, cooking until the spinach is wilted and the carrot is tender, about 5 minutes. Remove from heat and stir in the crumbled feta cheese and black pepper.
  4. Roll out the dough on a floured surface to about 2mm thick. Cut into circles of about 10 cm in diameter.
  5. Place a spoonful of the vegetable mixture in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
  6. In a deep pan, heat enough olive oil for frying over medium-high heat. Fry the pastéis in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
  7. Serve warm with your favorite dipping sauce.
