Ingredients
- Lentils - 100 grams (dry)
- Pasta (any shape, preferably whole grain) - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper (red or yellow) - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 400 milliliters
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a pot, bring 400ml of vegetable broth to a boil and add the lentils. Cook for about 15-20 minutes until tender, then drain and set aside.
- While the lentils are cooking, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced carrot and bell pepper to the skillet and cook for about 5 minutes until they start to soften.
- Stir in the diced tomato, cooked lentils, cumin, paprika, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld together.
- Combine the cooked pasta with the lentil mixture, tossing gently to coat. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
