Ingredients

  • Lentils - 100 grams (dry)
  • Pasta (any shape, preferably whole grain) - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 milliliters
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a pot, bring 400ml of vegetable broth to a boil and add the lentils. Cook for about 15-20 minutes until tender, then drain and set aside.
  3. While the lentils are cooking, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  5. Add the diced carrot and bell pepper to the skillet and cook for about 5 minutes until they start to soften.
  6. Stir in the diced tomato, cooked lentils, cumin, paprika, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld together.
  7. Combine the cooked pasta with the lentil mixture, tossing gently to coat. Adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
