- Chickpea pasta - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a pot of salted water to a boil and cook the chickpea pasta according to package instructions until al dente, usually about 7-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
- Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Once the pasta is done, drain it and add it to the skillet with the sautéed vegetables.
- Drizzle with lemon juice, and season with salt and black pepper. Toss everything together until well combined.
- Serve warm, topped with grated Parmesan cheese if desired.
