Ingredients

  • Chickpea pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the chickpea pasta according to package instructions until al dente, usually about 7-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  4. Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Once the pasta is done, drain it and add it to the skillet with the sautéed vegetables.
  7. Drizzle with lemon juice, and season with salt and black pepper. Toss everything together until well combined.
  8. Serve warm, topped with grated Parmesan cheese if desired.
