  • Nutritional yeast - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved

Steps

  1. Soak the raw cashews in water for at least 2 hours or overnight for a creamier texture. Drain and rinse before using.
  2. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  3. In a blender or food processor, combine the soaked cashews, minced garlic, nutritional yeast, olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy, adding reserved pasta water as needed to reach desired consistency.
  4. In a large skillet over medium heat, add the blended cashew sauce and cherry tomatoes. Stir gently until heated through, about 3-5 minutes.
  5. Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
  6. Remove from heat, stir in the chopped fresh basil, and adjust seasoning if necessary.
  7. Serve immediately, garnished with additional basil if desired.
