Steps
- In a mixing bowl, combine the arrowroot starch and salt.
- Gradually add the water and olive oil, mixing until a dough forms.
- Knead the dough for about 5 minutes until smooth. Let it rest for 10 minutes.
- While the dough rests, heat a skillet over medium heat and add the minced garlic.
- Sauté the garlic until fragrant, then add the cherry tomatoes. Cook for 5-7 minutes until softened.
- Roll out the dough on a lightly floured surface (using arrowroot starch) to about 2-3 mm thickness.
- Cut the rolled dough into your desired pasta shape (e.g., fettuccine or tagliatelle).
- Bring a pot of salted water to a boil, then add the pasta. Cook for 3-4 minutes until they float to the surface.
- Drain the pasta and add it to the skillet with the sautéed tomatoes and garlic. Toss to combine.
- Serve hot, garnished with fresh basil and grated Parmesan cheese, if using.
