Ingredients
- Almond flour - 100 grams
- Eggs - 2 large
- Olive oil - 1 tablespoon
- Parmesan cheese, grated - 30 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/2 teaspoon
- Fresh basil, chopped - 1 tablespoon
- Heavy cream - 100 ml
- Mushrooms, sliced - 100 grams
Steps
- In a mixing bowl, combine almond flour, eggs, olive oil, grated Parmesan cheese, salt, black pepper, and garlic powder. Mix until a dough forms.
- On a floured surface (using extra almond flour), roll out the dough to about 5 mm thickness and cut into desired pasta shapes.
- Bring a pot of salted water to a boil. Add the pasta and cook for 3-4 minutes or until al dente. Drain and set aside.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add sliced mushrooms and sauté until golden brown, about 5-7 minutes.
- Lower the heat and add heavy cream and chopped basil to the skillet with mushrooms. Stir well and let simmer for 2-3 minutes.
- Add the cooked pasta to the skillet and toss to coat in the creamy mushroom sauce. Cook for an additional 1-2 minutes.
- Serve hot, garnished with extra Parmesan cheese and fresh basil if desired.
