Ingredients

  • Almond flour - 100 grams
  • Eggs - 2 large
  • Olive oil - 1 tablespoon
  • Parmesan cheese, grated - 30 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Fresh basil, chopped - 1 tablespoon
  • Heavy cream - 100 ml
  • Mushrooms, sliced - 100 grams

Steps

  1. In a mixing bowl, combine almond flour, eggs, olive oil, grated Parmesan cheese, salt, black pepper, and garlic powder. Mix until a dough forms.
  2. On a floured surface (using extra almond flour), roll out the dough to about 5 mm thickness and cut into desired pasta shapes.
  3. Bring a pot of salted water to a boil. Add the pasta and cook for 3-4 minutes or until al dente. Drain and set aside.
  4. In a skillet, heat a tablespoon of olive oil over medium heat. Add sliced mushrooms and sauté until golden brown, about 5-7 minutes.
  5. Lower the heat and add heavy cream and chopped basil to the skillet with mushrooms. Stir well and let simmer for 2-3 minutes.
  6. Add the cooked pasta to the skillet and toss to coat in the creamy mushroom sauce. Cook for an additional 1-2 minutes.
  7. Serve hot, garnished with extra Parmesan cheese and fresh basil if desired.
