Ingredients

  • Spaghetti - 200 grams
  • Dried seaweed (kombu or nori) - 10 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Coconut cream - 100 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a small bowl, soak the dried seaweed in warm water for about 10 minutes until softened, then chop into small pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
  5. Stir in the chopped seaweed and coconut cream, and cook for another 2-3 minutes until heated through.
  6. Add the cooked spaghetti to the skillet and toss to combine with the sauce. Squeeze in the lemon juice and season with salt and black pepper to taste.
  7. Remove from heat and stir in the chopped parsley before serving.
