- Dried seaweed (kombu or nori) - 10 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Coconut cream - 100 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a small bowl, soak the dried seaweed in warm water for about 10 minutes until softened, then chop into small pieces.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
- Stir in the chopped seaweed and coconut cream, and cook for another 2-3 minutes until heated through.
- Add the cooked spaghetti to the skillet and toss to combine with the sauce. Squeeze in the lemon juice and season with salt and black pepper to taste.
- Remove from heat and stir in the chopped parsley before serving.
