  • Avocado - 1 ripe (about 200g)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 30g, grated
  • Fresh basil - 10g, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles.
  2. Heat olive oil in a pan over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add the zucchini noodles to the pan and cook for 3-4 minutes, stirring gently until slightly softened.
  4. In a blender or food processor, combine the ripe avocado, lemon juice, grated Parmesan cheese, chopped basil, salt, and black pepper. Blend until smooth and creamy.
  5. Remove the zucchini noodles from heat and mix in the avocado sauce until well combined.
