- Nutritional yeast - 2 tablespoons
- Coconut milk - 100 ml

Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Add the cubed pumpkin to the skillet and stir well. Cook for about 5 minutes until it starts to soften.
- Pour in the vegetable broth and cover the skillet. Let it simmer for about 10 minutes until the pumpkin is tender.
- Use a fork or immersion blender to mash the pumpkin into a creamy consistency. Stir in the coconut milk and nutritional yeast, mixing well.
- Season with salt, black pepper, and red pepper flakes if using. Cook for an additional 2-3 minutes to heat through.
- Add the cooked pasta to the sauce, tossing well to combine. Adjust seasoning if necessary.
- Serve hot, garnished with chopped fresh parsley.
