  • Onion (chopped) - 1 medium
  • Vegetable broth - 200 ml
  • Nutritional yeast - 2 tablespoons
  • Coconut milk - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons
  • Red pepper flakes - 1 teaspoon (optional)

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  3. Add the cubed pumpkin to the skillet and stir well. Cook for about 5 minutes until it starts to soften.
  4. Pour in the vegetable broth and cover the skillet. Let it simmer for about 10 minutes until the pumpkin is tender.
  5. Use a fork or immersion blender to mash the pumpkin into a creamy consistency. Stir in the coconut milk and nutritional yeast, mixing well.
  6. Season with salt, black pepper, and red pepper flakes if using. Cook for an additional 2-3 minutes to heat through.
  7. Add the cooked pasta to the sauce, tossing well to combine. Adjust seasoning if necessary.
  8. Serve hot, garnished with chopped fresh parsley.
