Ingredients

  • Pasta (spaghetti or fettuccine) - 150 grams
  • Brown lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Canned tomatoes - 200 grams, crushed
  • Vegetable broth - 300 ml
  • Bay leaf - 1 leaf
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish, chopped

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic, diced carrot, and diced celery to the pot. Sauté for another 5 minutes until the vegetables are softened.
  4. Stir in the rinsed lentils, crushed tomatoes, vegetable broth, bay leaf, dried oregano, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the lentils are tender.
  5. While the ragu is simmering, cook the pasta in a separate pot of boiling salted water according to package instructions until al dente. Drain and set aside.
  6. Once the lentils are cooked, remove the bay leaf and adjust seasoning if necessary. If the ragu is too thick, you can add a bit more vegetable broth or water.
  7. In a large bowl, combine the cooked pasta with the lentil ragu, adding the remaining tablespoon of olive oil. Toss until well coated.
  8. Serve hot, garnished with chopped fresh parsley.
