- Pasta (spaghetti or fettuccine) - 150 grams
- Brown lentils - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Canned tomatoes - 200 grams, crushed
- Vegetable broth - 300 ml
- Bay leaf - 1 leaf
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish, chopped
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, and diced celery to the pot. Sauté for another 5 minutes until the vegetables are softened.
- Stir in the rinsed lentils, crushed tomatoes, vegetable broth, bay leaf, dried oregano, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the lentils are tender.
- While the ragu is simmering, cook the pasta in a separate pot of boiling salted water according to package instructions until al dente. Drain and set aside.
- Once the lentils are cooked, remove the bay leaf and adjust seasoning if necessary. If the ragu is too thick, you can add a bit more vegetable broth or water.
- In a large bowl, combine the cooked pasta with the lentil ragu, adding the remaining tablespoon of olive oil. Toss until well coated.
- Serve hot, garnished with chopped fresh parsley.
