  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 400 grams
  • Beef broth - 250 ml
  • Bay leaf - 1
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, bring salted water to a boil and cook the gluten-free pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 5 minutes.
  4. Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly.
  5. Add the canned diced tomatoes, beef broth, bay leaf, oregano, salt, and black pepper. Stir to combine and bring to a simmer.
  6. Reduce the heat to low and let the ragu simmer uncovered for about 25 minutes, stirring occasionally, until thickened.
  7. Remove the bay leaf and adjust seasoning if necessary.
  8. Serve the ragu over the cooked gluten-free pasta and garnish with fresh parsley.
