- Canned diced tomatoes - 400 grams
- Beef broth - 250 ml
- Bay leaf - 1
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, bring salted water to a boil and cook the gluten-free pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 5 minutes.
- Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly.
- Add the canned diced tomatoes, beef broth, bay leaf, oregano, salt, and black pepper. Stir to combine and bring to a simmer.
- Reduce the heat to low and let the ragu simmer uncovered for about 25 minutes, stirring occasionally, until thickened.
- Remove the bay leaf and adjust seasoning if necessary.
- Serve the ragu over the cooked gluten-free pasta and garnish with fresh parsley.
