- Yellow bell pepper - 1 large
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Onion - 1 small, chopped
- Vegetable broth - 200 ml
- Nutritional yeast - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, chop the red and yellow bell peppers, onion, and garlic.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the chopped bell peppers to the skillet and continue to sauté for about 5-7 minutes until they are soft.
- Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes.
- Remove the skillet from heat and blend the mixture using an immersion blender until smooth. You can also transfer it to a blender if necessary.
- Stir in the nutritional yeast, and season with salt and black pepper to taste.
- Combine the cooked pasta with the bell pepper sauce, tossing to coat evenly.
- Serve hot, garnished with fresh basil.
