Ingredients

  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Onion - 1 small, chopped
  • Vegetable broth - 200 ml
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, chop the red and yellow bell peppers, onion, and garlic.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the chopped bell peppers to the skillet and continue to sauté for about 5-7 minutes until they are soft.
  5. Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes.
  6. Remove the skillet from heat and blend the mixture using an immersion blender until smooth. You can also transfer it to a blender if necessary.
  7. Stir in the nutritional yeast, and season with salt and black pepper to taste.
  8. Combine the cooked pasta with the bell pepper sauce, tossing to coat evenly.
  9. Serve hot, garnished with fresh basil.
