Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
- While the pasta cooks, slice the onions thinly.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden and caramelized (about 10-15 minutes).
- Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Pour the vegetable broth and soy sauce into the skillet, stirring to combine. Let it simmer for about 5 minutes to allow the flavors to meld.
- Season the sauce with salt and black pepper to taste.
- Add the cooked pasta to the skillet, tossing to coat in the onion sauce. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
