Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
  2. While the pasta cooks, slice the onions thinly.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden and caramelized (about 10-15 minutes).
  4. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  5. Pour the vegetable broth and soy sauce into the skillet, stirring to combine. Let it simmer for about 5 minutes to allow the flavors to meld.
  6. Season the sauce with salt and black pepper to taste.
  7. Add the cooked pasta to the skillet, tossing to coat in the onion sauce. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
