  • Fresh spinach - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 100 grams, halved
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat and add minced garlic, sautéing for 1-2 minutes until fragrant.
  3. Add the cherry tomatoes to the skillet and cook for an additional 3-4 minutes until they begin to soften.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Once the pasta is cooked, reserve 1/4 cup of pasta water and then drain the pasta.
  6. Add the drained pasta to the skillet with the spinach and tomatoes, and toss to combine. If the dish seems dry, add a little reserved pasta water.
  7. Season with salt, black pepper, and red pepper flakes if using, then remove from heat.
  8. Serve hot, topped with grated Parmesan cheese.
