- Cherry tomatoes - 100 grams, halved
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat and add minced garlic, sautéing for 1-2 minutes until fragrant.
- Add the cherry tomatoes to the skillet and cook for an additional 3-4 minutes until they begin to soften.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Once the pasta is cooked, reserve 1/4 cup of pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the spinach and tomatoes, and toss to combine. If the dish seems dry, add a little reserved pasta water.
- Season with salt, black pepper, and red pepper flakes if using, then remove from heat.
- Serve hot, topped with grated Parmesan cheese.
