- Mixed mushrooms (shiitake, cremini, and oyster) - 200 grams, sliced
- Onion - 1 small, diced
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
Steps
- Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and browned.
- Season the mushroom mixture with salt, black pepper, and red pepper flakes if using. Stir in the lemon juice and chopped parsley.
- Add the cooked pasta to the skillet along with a splash of the reserved pasta water. Toss everything together for 1-2 minutes until well combined and heated through.
- Serve immediately, garnished with additional parsley if desired.
