  • Cherry tomatoes (halved) - 150 grams
  • Heavy cream - 100 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated, optional) - 30 grams

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque. Season with salt and black pepper.
  4. Stir in the halved cherry tomatoes and cook for another 2 minutes until they begin to soften.
  5. Reduce the heat to low and pour in the heavy cream, stirring well to combine. Let it simmer for 2-3 minutes to thicken slightly.
  6. Add the cooked pasta to the skillet and toss to combine, adding a splash of reserved pasta water if needed to loosen the sauce.
  7. Stir in the chopped parsley and lemon juice, adjusting seasoning if necessary.
  8. Serve hot, garnished with grated Parmesan cheese if desired.
